Chicken Nachos

This is one of the few meals that all of my family members love and it’s super duper easy.

Ingredients:

2 bags of tortilla chips

2-3 bags of finely shredded cheese (cheddar or colby jack/monterey jack mix) 8 ounce size

1 bag of Tyson Grilled and Ready Chicken Strips

1 bag of frozen grilled onions and bell peppers (you can also use fresh onions and peppers)

Step 1:

Preheat oven to 375 degrees

Spread chips onto two large cookie sheets

Step 2:

Cover chips with half of a bag of cheese (half of a bag lightly sprinkled on both sheets of chips)

Step 3:

Microwave the chicken in a microwave safe bowl for 4 to 5 minutes

Step 4:

Chop chicken into small pieces and spread over chips on both sheets

Step 5:

Microwave frozen onions and peppers, chop into smaller pieces (if needed), and spread over chicken (we only put the onions and peppers on half of the nachos, because the kids don’t like onions or peppers)

*if you use fresh onions and peppers, microwaving them before you put them on the nachos is completely up to you

Step 6:

Cover chips with remaining cheese (use as little or as much as you like)

Step 7:

Bake at 375 degrees for 5 minutes

Step 8:

Enjoy!  (because I said so … dammit!)

  1. “Enchiladas” (notice the crafty quotes denoting that these are not really enciladas) are a staple at our house.
    Preheat oven to 325
    Place 1 family size bag (12-18 count) frozen burritos in a casserole dish
    Mix together 2 cans of enchilada sauce with 2 cups shredded sharp cheddar or Mexican blend cheese
    Pour over frozen burritos
    Bake for 35-45 minutes

    This is probably our #1 I-have-no-idea-what-to-make-for-dinner meal in our house. Zero prep time and very filling 🙂
